About me

Bjorn Adalbjornsson is an associate professor in Food Chemistry and Product Development at the University of Iceland. He has a background in biochemistry, biomolecular sciences, food chemistry and product development. In his projects, he links biochemistry with food innovation. He has worked on research projects with companies of all sizes. He has been an advisor to companies in the US with focus on improving and understanding alternative food products. Bjorn co-founded an alternative food production company, Loki Foods, in 2022.
