About me

She actively participates in national and European research projects and has published more than 60 JCR research articles mainly focused on: (a) effect of gastrointestinal digestion conditions on macro and micronutrients bioavailability, (b) new healthier food design or (c) impact of food processing on functional compounds stability, among other topics.
