Gudjon Thorkelsson has been a leader in food research and development in Iceland since 1985. His expertise is in meat and fish quality and processing and linking research to industry needs through innovation and training. Gudjon has developed interdisciplinary courses in food processing and products development. Gudjon has also led several training activities within the food industry in Iceland most of which in relation to sustainable regional development. He is the author of the Icelandic Meat Buyers Guide and has been a consultant for the government on regulations on meat production and processing.
